White Chocolate Truffles

Chocolate truffles always represent romantic gestures if
given to someone special. It is best presented when personally
prepared, as the gesture of the giver plus the sweetness of the
recipe makes it all perfect.
The ingredients:
1/4 cup butter
1/2 cup confectioner’s sugar
1 teaspoon almond extract
1 egg yolk
8 oz. white chocolate, broken into small pieces
1 cup chopped blanched almonds, lightly toasted
Melt butter and chocolate in a low heat with constant stirring.
Remove from heat then add sugar, almonds and egg yolks, make it
smooth by beating in with an electric beater. Put in a glass
casserole cover and refrigerate it for about one hour. Roll and
shape the mixture in a one inch ball, and roll in the almonds.
Set aside and cover for about 8 hours in a refrigerator. Place
in miniature cups and serve at a room temperature. Left overs
should be placed in an airtight container and placed into a
refrigerator.
